Today Throws a Destination Wedding Week 8

By Nina Callaway, About.com

This week, on Today Throws a Destination Wedding, we'll find out what Buddy and his groomsmen will wear. One thing's for sure, on this beach destination wedding, it won't be tuxedos! We'll also see the choices for the wedding cake. They are all perfect for a Caribbean destination wedding, and have unusual flavors as well. After a long-distance relationship (including while Buddy, an army corporal was stationed in Iraq), this weekend Buddy and Nikki moved into their first home together! They looked tired, but excited to start their journey together.

First, lets find out what viewers chose for the groom and groomsmen to wear

Viewers had four very different casual looks to choose from.
  • An all white look, with Cuban guayabera shirt and linen pants.
  • My favorite choice, a tan cotton suit from Kenneth Cole with a coral shirt and no tie
  • The Brooks Brothers look with navy pants, blue button-down, and a striped ribbon belt
  • John Varvatos relaxed beige suit with a tan striped shirt.

On the confession cam, Nikki said that her favorite was look number one, which would match her dress. Buddy said he thought he could pull off look number one, but his favorite was the Kenneth Cole suit. Neither of them liked look number two, thinking what I did, that it looked like he was coming from work!

And the winner is:

the Kenneth Cole suit! For a surprise, the Today Show arranged for Buddy's dad (also his best man) to be the one to model the winning suit. Nikki and Buddy didn't even know that he was in New York!

What will Nikki and Buddy's beach wedding cake look like?

While your parents may have bitten into a stale vanilla cake with white frosting, the trend in wedding cakes is for color, personality, and most importantly, great taste. The four cakes viewers have to choose from have very different looks, but all evoke the beach, where Nikki and Buddy's destination wedding will take place.

With destination weddings, couples have to decide whether or not to hire a baker from the US and pay to fly that baker to their wedding location or arrange with their resort for a wedding cake, never getting to know what that cake tastes like. You should also consider what will stand up best in the heat, which is why many opt for fondant's smooth texture. On the Today Show, viewers will have to choose from three cakes from US bakers, and one from their resort.

  • Choice one is called Pearls and Shells by Cakes for Occasions. Their three-layer chocolate and espresso "Opera Cake" is covered with rolled fondant with sugared seashells. Underneath that fondant (an icing that looks pretty and will hold up well to the Caribbean heat, but isn't as tasty as traditional icing), is a layer of chocolate ganache, a layer of mocha cream, and a vanilla buttercream frosting. Yum! For an extra special touch, each guest will receive their slice of cake adorned with a white chocolate sea-shell embossed with gold.

  • Wedding Cake #2 is a "Carribean Citrus Love" cheesecake featuring chocolate-sculpted lemons, limes, leaves, and the couples monogram. An elegant beach look, the top layer is a white chocolate clamshell adorned with pearls. There are two different layers for different guests preferences – one has a chocolate butter cake with 3 fillings of key lime curd, lemon cream with toasted coconut, and white chocolate buttercream; the other layer is a triple chocolate cheesecake on a macadamia nut crust.

  • Wedding Cake #3 is made of chocolate chip cookies hidden behind an elegant exterior! Surprising but true, this cake follows in the trend of the cupcake wedding cake, and the Krispy Kreme wedding cake. Geoff & Drew's Incredible Cookies have created a white fondant-covered cake with beaded trim border, adorned with gorgeous sugar pastillage orchids. But inside guests will find Geoff & Drew's award-winning chocolate chunk cookies with French buttercream icing.

  • Wedding Cake #4 is from Anguilla, Nikki and Buddy's island location. Blanchard's, a famous restaurant on the island, presents us with the most colorful choice. Each of the four chocolate layers represents a different part of island culture, and features a different flavor. The bottom has the beautiful coral and seashells of the Caribbean ocean and has a chocolate cream filling, the second layer features sailboat racing, the national sport of Anguilla and has a lemon filling, and the top layer has a Caribbean cottage next to the lush foliage, representing home and family, and features a coconut cream filling.

Voting has ended for the wedding cakes!
